Strawberries are finally good again, which means it’s time for an easy, creamy cheesecake that doesn’t require any complicated steps or ingredients.
My version uses sweetened condensed milk for a smooth, foolproof filling and it works with fresh or frozen berries, so you can make it anytime.

Simple Strawberry Cheesecake Recipe
This Easy Strawberry Cheesecake recipe is made with six ounces of cream cheese and a can of sweetened condensed milk along with a couple other ingredients.
Five minutes with a hand mixer or a stand mixer and you'll have a smooth filling, which turns into a creamy, cool cheesecake pie to slide in the oven. No water bath here.
Bake for 30 minutes and go watch an episode of the Golden Girls or the Gilmore Girls and presto, the pie will be done baking.
Let cool on a rack for an hour then slide into the refrigerator to fully cool down and firm up.
Pie Steps
Slice strawberries. Fresh berries are shown in these photos but frozen strawberries work just as well. Be sure to drain them thoroughly and pat dry to prevent a soggy pie crust.
Use a homemade graham cracker crust or a store-bought.


Mix up the filling and pour it over the berries.


Before You Start
You can use fresh or frozen strawberries for this cheesecake. If using frozen, thaw them first and pat dry to remove excess liquid.
Make sure you’re using sweetened condensed milk, not evaporated milk. Condensed milk is thick and sweet and usually comes in a shorter can.
If it pours like regular milk, you’ve grabbed the wrong one.

Strawberry Cheesecake (Easy with Fresh or Frozen Berries)
Easy strawberry cheesecake is creamy, simple, and made with sweetened condensed milk for a smooth, foolproof filling. Works with fresh or frozen strawberries.
Ingredients
- 1 9-inch graham cracker crust
- 1 cup fresh strawberries, sliced (or thawed frozen, drained)
- 6 ounces cream cheese, room temperature
- 14-ounce can sweetened, condensed milk
- 1 large egg
- 2 tablespoon lemon or lime juice
- 1 teaspoon vanilla extract
- whipped cream for garnish (optional)
- fresh strawberries for garnish (optional)
Instructions
Measure a cup of sliced strawberries and place in an even layer over graham cracker crust.
Beat softened cream cheese, condensed milk, lemon juice and egg in a large bowl with an electric mixer or in the bowl of a stand mixer until creamy and there are no lumps.
Pour cream cheese mixture over strawberries.
Bake at 350°F for 30 minutes or until the center is mostly set with a slight jiggle. If it wiggles like a wave, it's not done yet.
Notes
Be sure to use room temperature cream cheese or you'll never get all the tiny cream cheese lumps out for a smooth texture.
