Is there a sweeter berry than a strawberry? I think not.
Raspberries and blueberries are delicious but for eating out of hand or making a cheesecake, I love a plump, ripe strawberry.

We had a white chocolate raspberry cheesecake made by Hank’s Cheesecakes in St. Louis. That cheesecake was beyond delicious but decidedly not simple.
This recipe is.
This Easy Strawberry Cheesecake recipe is made with six ounces of cream cheese and a can of sweetened condensed milk along with a couple other ingredients.
Five minutes with a hand mixer or a stand mixer and you’ll have a which turns into a creamy, cool cheesecake pie to slide in the oven.
Set the oven timer for 30 minutes and, depending on your age, go watch an episode of the Golden Girls or the Gilmore Girls and presto, the pie will be done baking.
Let cool on a cookie rack for an hour the slide into the refrigerator to fully cool down and firm up.
Recipe Notes:
I used frozen strawberries in this cheesecake but you can substitute fresh berries if you’d like.
If you are using frozen berries, thaw them out on a clean kitchen towel or on paper bags or paper towels to reduce the amount of liquid you’re adding to the cheesecake.
Also, a note of caution, don’t confuse your milks. You need sweetened condensed milk for this recipe.
Be sure to use sweetened condensed milk as shown here.
Sweetened condensed milk usually comes in a shorter can and is a thick liquid.
Be sure to pay attention at the store. A common mistake is picking up evaporated milk when you need sweetened condensed milk and vice versa.
If you find yourself pouring what could pass for a regular milk from a cow or an almond tree, you’ve grabbed the wrong type.
You’ll find both evaporated and condensed in the baking aisle at the grocery store, usually near the chocolate chips.
Cover the cheesecake with fresh berries if you’d like or serve as is. Don’t skip the whipped cream though!
Simple Strawberry Cheesecake is made with six ounces of cream cheese and a can of sweetened condensed milk along with a couple other ingredients, which turns into a creamy, cool cheesecake pie that takes all of five minutes to mix up and slide in the oven. Measure a cup of sliced strawberries and place in an even layer over graham cracker crust. Beat softened cream cheese, condensed milk, lemon juice and egg in a large bowl with an electric mixer or in the bowl of a stand mixer until creamy and there are no lumps. Pour cream cheese mixture over strawberries. Bake at 350 for 30 minutes or until the center of the cheesecake gives slightly when moved. If center is wobbling, it isn't done yet. Be sure to use room temperature cream cheese or you'll never get all the tiny cream cheese lumps out for a smooth texture.
