S'mores Bars are the ultimate melted chocolate marshmallowy treat wrapped in a homemade graham cracker crust.
I recently simplified this recipe and, frankly, it's better. I wanted a s'mores bar made with basic ingredients you might already have in the pantry but that still reminded me of the amazing s'mores bars Starbucks sold years ago.

Before You Start
Start by making a quick graham cracker crust: just crumbs, sugar, and melted butter. Bake it for a few minutes to give it structure. Full instructions for making a homemade 8x8 graham cracker crust.
Then comes the fun part: layer on milk chocolate bars, drizzle with sweetened condensed milk and finish with a cloud of mini marshmallows.
Put it back in the oven until the marshmallows are puffed and golden. Then you'll chill it thoroughly to make it easier to slice.

Recipe Tips
- If you want these bars to hold together better, you should bake the graham cracker crust for 7 to 10 minutes.
- Don't skip the sweetened condensed milk drizzle. It helps to hold the graham cracker, chocolate and marshmallows together.
- You can buy squeeze bottles of condensed milk now so you don't have to store partially used cans in your fridge.
How to Cut S'mores bars cleanly
I love making bar cookies because they're so easy.
However, I struggle with cutting them neatly.
Use a sharp knife, a bench scraper and/ or a ruler.
Use the bench scraper to score a grid on top of the bars for slicing.
Run the knife under hot tap water and wipe with a clean cloth to dry the knife. Immediately slice the bar using the ruler or scraper as a guide to follow. Repeat the hot water rinse after every two slices.
I wanted to make these bars on the smaller side because they're so rich so I sliced four rows horizontally and then four rows vertically so that I had 16 2-inch bars.
Storage and Make Ahead Instructions
Store these bars at room temperature in an airtight container for up to a week. I bought this sturdy freezer container for desserts in 2025 and really like it. It has clips so you know when it's sealed.
For longer storage, wrap individual bars in plastic wrap or wax paper, place in a freezer safe container and freeze for up to one month.

Starbucks Copycat S'mores Bars
Copycat Starbucks S'mores bars have layers of graham cracker crust, melted milk chocolate, and toasted marshmallows for an easy baked s'mores dessert.
Ingredients
- 1-ÂĽ cups graham cracker crumbs
- 5 Tablespoons butter, melted
- ÂĽ cup granulated sugar
- 4 full-size Hershey bars (1.55 ounces each--6.2 ounces total)
- 2.5 ounces sweetened condensed milk
- 3 cups mini marshmallows (approximately ½ bag or 5 ounces of marshmallows)
Instructions
Gather your ingredients.
Preheat oven to 350·°F.
Prepare an 8x8 pan and line with parchment paper. Use binder clips to hold the parchment paper to the pan. (optional)
Prepare the crust: combine graham cracker crumbs, granulated sugar and melted butter.
Press crumb mixture firmly into an even layer in the prepared pan.
Bake at 350°F for 7 to 10 minutes.
Remove pan from oven and line with chocolate bars.
Drizzle sweetened condensed milk over the bars.
Sprinkle miniature marshmallows over the top.
Bake at 350°F for about 20 minutes or until the marshmallows have softened and the tops have turned golden brown. Oven temperatures vary so check bars at 15 minutes.
Let cool at room temperature for an hour and then chill in the fridge before slicing.
Once well-chilled, use a sharp knife to slice the bars.
Notes
You don't need to bake this graham cracker crust but if you want it to hold together better, you should bake it for 7 to 10 minutes.

For serving, I cut the bars four rows across and four rows down to get 16 bars, which are 2 by 2 inches.
