These cookies taste like your childhood if you grew up in America: buttery, sweet and a bit corny thanks to a cup of ground cereal "flour" in the dough. A cup of Lucky Charms marshmallows or "marbits" as General Mills calls brings a bit of fruity chewiness and color.

I was inspired to make these after finding a box of just Lucky Charms marshmallows or "marbits" as General Mills calls them at Sam's Club this winter.

I used what I learned in a baking workshop taught by Christina Tosi of Milkbar fame to create the dough.
Tosi is a big fan of cereal and milk infused cookie doughs. One of my popular recipes on this site is is a version of her Cornflake Cookies.
You may also like Toffee Doodle Cookies, Cookie Monster Cookies and Chocolate Cinnamon Cookies or Chocolate Chipless. If you're making these for St. Patrick's Day, you could also make Shamrock Cookies.
So, I employed one of Tosi's tip and ground a cup of cereal in my food processor to add to the dough.

I was going to use regular Lucky Charm cereal but it's made from oats and I have too many memories of just picking out the marshmallows and eating the marshmallows because the cereal bits were kind of plain.
Luckily (haha, no pun intended) I found Lucky Charms Minis in the cereal aisle at the store. The Minis are made from corn and they taste sweeter than regular Lucky Charms.

Room Temperature Butter for Baking
Lucky Charms Cookies Ingredients
- Butter
- Granulated sugar
- all purpose flour
- baking soda
- baking powder
- vanilla extract
- sea salt
- cream of tartar (despite the name, this is a powder, not an actual cream)
- Lucky Charms Minis Cereal (you can substitute regular Lucky Charms cereal if you can't find the Minis but the flavor profile won't be the same.
- Lucky Charms marshmallows
- Green sanding sugar (optional)

Step by Step Directions
You're going to make a drop cookie dough. You'll be grinding cereal to add to the dough, adding a cup of marshmallow bits and pulling the cookies out a few minutes before they're done baking to top with Lucky Charms then return to the oven to finish baking.
- Beat butter and sugar together until light and fluffy--an estimated three to five minutes depending on how powerful your mixer is and whether you're using a hand or stand mixer.
- Add egg and vanilla extract and mix until egg has thoroughly combined with butter and sugar.
- Grind a cup of Lucky Charms Minis using a food processor or smash into a tiny bits using a meat mallet or rolling pin.
- Add dry ingredients: flour, ground cereal, baking powder, baking soda, cream of tartar and kosher salt to the butter/sugar/egg mixture.
- Mix until there aren't any white streaks remaining.
- Stir in Lucky Charms marshmallow bits.
- Scoop dough into balls using a #40 cookie scoop (I use this one).
- Optional: this is where you would roll the balls of dough in a colorful sanding sugar before baking.
- Bake 12 at a time on a parchment-lined cookie sheet at 350 for 12 minutes, pulling them out at 9 minutes to add marshmallow bits to the tops of cookies for extra color and fruitiness.
- Let cool on cookie sheet for three to five minutes before moving to counter top or cooling rack to finish cooling.
Cookie Baking Tip
Too much flour or not enough can ruin your batch of cookie dough. Weighing flour is best using a kitchen scale but failing that, use the dip and sweep method to measure your flour. Pour flour into a bowl and fluff it up with a spoon. Now spoon flour into your measuring cup until slightly heaped. Then slide a butter knife or a bench scraper across the top of the measuring cup to remove the excess.
Storing and Making Ahead
These cookies are best made the day you plan to eat them. Once you have the marshmallow bits mixed into the dough, the marbits start to become really soft and disintegrate.
Don't refrigerate or freeze the dough, the marbits degrade even faster.
If you must bake in advance, you could make these and store them for a day or two at room temperature in an airtight container.

- 1 cup unsalted butter (two sticks)
- 1-½ cups granulated sugar
- 1 large egg
- ½ teaspoon vanilla extract
- 2-¼ cups all-purpose flour
- 1 teaspoon cream of tartar
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon sea salt
- 1 cup Lucky Charms Minis cereal, ground
- 1 cup Lucky Charms marshmallow

This is a thick cookie dough. You''ll want to use a stand mixer if you have one or at the very least an electric hand mixer.
If you can't find Lucky Charms Minis Cereal, you can substitute regular Lucky Charms cereal but the flavor won't be the same. Lucky Charms are made with oats, the minis are made with corn.
You can find separate bags of Lucky Charms Marshmallows at Sam's Club and at Amazon.
Bake these cookies on a parchment lined backing sheet to enusre that they don't stick to the sheet. Somettimes sugary additions can burn and stick if they are in direct contact with a hot cookie sheet.
