How to Make Cookies from Brownie Mix
These are The Best Cookies. I can't believe I haven't made them until now. At almost 55 years of age!
You can use any box mix for these cookies. You could also make Brownie Cookies with M&Ms or festive Peppermint Brownie Cookies.
However, Ghirardelli is the best I've tried thus far.
You want, ideally, to buy the Ghirardelli Dark Chocolate Brownie Mix, which is 20-ounces.
But no worries, this cookie recipe will work with any boxed mix.
However, if you use a box that has less than 20 ounces of mix, you'll need to add more flour. See recipe notes.
If you're a fan of chocolate, you must try Frito Bars, M&M Bars, Soft Chocolate Chip Cookies, Congo Bars, Chocolate Toffee Cookies or Chocolate Crinkle Cookies.
This Pecan Pie Bark is another reader favorite as are these Peanut Butter Brownies and Salty Sweet Peanut Butter Cup Bars.
You can also make cookies with boxes of cake mix like Snickerdoodles made with cake mix, Butter Cookies and Orange Cookies.

Recipe
Brownie Mix Cookies
Soft, chewy, fudgy, brownie cookies studded with chocolate chips and made with a box brownie mix are going to be your new favorite.
Ingredients
- Two large eggs
- 20-ounce brownie mix I used Ghirardelli
- ¼ cup all purpose flour
- ¼ cup vegetable oil
- 1 Tablespoon water
- ½ cup chocolate chips (I used milk chocolate, use what you have)
Instructions
- Beat eggs with a whisk in a large mixing bowl.
- Empty package of brownie mix into the bowl.
- Add ¼ cup flour, 1 teaspoon of vanilla extract , 1 Tablespoon water, ¼ cup vegetable or canola oil, ½ cup chocolate chips to bowl of brownie mix and eggs.
- Stir together until combined, about two minutes. No white streaks from the flour should remain but don't over mix.
- Portion brownie batter dough into balls using a #40 scoop or two teaspoons..
- Position on parchment-lined baking sheet.
- Bake at 350°F for 11 to 12 minutes.
Notes
Leave cookies on baking sheet for five minutes before moving to a wire rack.
Brownie mixes come in many sizes. I used a 20-ounce boxed brownie mix for this one.
BUT, if you use a mix with less than 20 ounces, you'll need to add more flour.
For an 18-ounce or 18.4 ounce box mix, increase flour to ½ cup.
For a 16-ounce box of brownie mix, increase flour to ¾ cup.
Basically for every two ounce difference in the mix, you'll add an extra ¼ cup of flour.
