How to Make Chocolate Covered Rice Krispie Treats
- Melt butter in a microwave safe bowl
- Add marshmallows and stir until they are thoroughly coated with butter.
- Heat marshmallows in 30 second increments stirring thoroughly until they begin to lose their shape and form a white blob of melted marshmallow.
- Pour crispy rice cereal into the bowl and begin stirring immediately until the cereal is coated with marshmallow.
- Pour cereal mixture into a non-stick 13x9 pan, which you've coated with non-stick spray or rubbed with a butter wrapper.
- Push cereal into an even layer using either a spatula or your hands that you've coated with butter or oil.
- Or use a piece of wax paper to push into an even layer while keeping your hands clean.
- Put pan of Rice Krispie treats into freezer for at least 30 minutes.
- Melt chocolate either in microwave or on stove top using a makeshift double boiler slowly and stirring often.
- Remove treats from freezer and drizzle chocolate over the top.
- Using an offset spatula, spread chocolate evenly over the top of the Rice Krispie treats.
- Top with sprinkles if you like.
- Let chocolate set for at least 30 minutes before slicing.

Melting Chocolate for Rice Krispie Treats
Hint: If you need to melt chocolate, it's best to either use chocolate disks, like Ghirardelli or a block of chocolate.
Melting chocolate chips is difficult. Chocolate chips were made to keep their shape in cookies.
It's hard to melt chocolate chips without burning them.
When melting the chocolate using the double boiler method, the sauce pot should just have about an inch of simmering water in it.
Add your chocolate to the glass bowl and melt it slowly over simmering water, stirring constantly.
Do not let the water boil, you risk burning the chocolate. That means you toss it and start over.
Don't let any water, even a drop, get in the chocolate, it will seize up and you'll have to toss it and start over.
You can also melt chocolate in a microwave at a low temperature in ten to 15 second increments thoroughly stirring after each zap in the microwave.
I prefer the double boiler method. It's easier to melt chocolate slowly on a stovetop. Chocolate can scorch easily in the microwave.
Rice Krispie Treat Substitutions
- Butter - replace with margarine.
- Marshmallows - use a 7-ounce jar of marshmallow fluff. (I have not tested this myself but my research tells me it should work).
- Sea salt - I like to add a ΒΌ teaspoon of sea salt when I melt butter for Rice Krispie treats but you can leave it out.
Variations
- Chocolate - I used Ghirardelli dark chocolate disks but you can use any chocolate you have--semi-sweet or milk chocolate chips or chop up a block of Trader Joe's chocolate. Or use white chocolate.
- Peanut Butter - add Β½ cup of smooth peanut butter to the butter and melt together, then add marshmallows.

The best way to store these treats is to wrap them individually in wax paper or plastic wrap. Then tuck them into an airtight container, such as a Tupperware container or a cookie tin.
