Oreo Rice Krispie Treats Recipe: Let me introduce you to one of the greatest combinations: chewy, marshmallowy, buttery Rice Krispie Treats stuffed with smashed Oreo cookies and coated with a sprinkle of crushed cookies on top.
Disclaimer: you're going to be doing a lot smashing and crushing of cookies for this recipe. If you're not okay with that, avert your eyes.
I love using Oreos in recipes because my son loves Oreo cookies. He's getting to be an older kid now. He graduates from high school in a month.
This is a classic Rice Krispie treat recipe that adds crushed cookies and extra marshmallows to the marshmallow treats.
If you're going to a dessert potluck, take these because they're best served at room temperature. So, no need to worry about keeping them refrigerated like a no-bake pie or keeping them warm, like a fruit pie.
Recipe Notes
You can use regular Rice Krispies in this treat recipe. I found a limited edition Cookies and Cream flavor Rice Krispies, which spurred the creation of this recipe but use what you have.
How to Make These Treats
- If ever there was a recipe to have your mise en place in order, this is it. You want everything ready before you melt the marshmallows because once those have melted, youβll have to work quickly before the marshmallows begin to cool and get difficult to work with.
- Prepare your pan by spraying it with non-stick spray and lining it with parchment paper.
- Measure cereal, pour into a bowl.
- Crush the cookies and add to the cereal.
- To crush the cookies, put them in a large resealable bag and smash them with a rolling pin or a meat mallet. You want the cookies pretty well crushed but you do want some chunks of Oreo.
- Add the cup of mini marshmallows and ΒΌ teaspoon sea salt to the bowl full of cereal and crushed cookies. Toss with your hands to get everything combined. Or, use a spatula but your hands will be easier.
- Melt butter in your microwave safe bowl.
- Once melted, add the 12-ounce bag of marshmallows.
- Stir until the marshmallows are coated with the melted butter. Heat until softened in 45 second intervals.
- Stir.
- If youβre confident the marshmallows are soft enough, pour the cereal/cookie/mini marshmallow mixture into the bowl of melted marshmallows and stir immediately working quickly until well combined.
Tools You'll Need
- Two mixing bowls (one should be microwave safe)
- Measuring cup
- Measuring spoons
- Rubber spatula
- 8x8 square pan (or 9x9) (if you don't have a square pan, use a pie plate)
- Parchment paper
- Microwave (you can melt marshmallows in a large saucepan over low to medium heat on your stove top if you donβt have a microwave or donβt like to use one.)
Recipe Notes--substitutions + amplifications
You have options with these bars.
Oreos are the gold standard to use in my opinion but you could also use an off-brand chocolate sandwich cookie in this recipe.
You could drizzle the Rice Krispies treats with melted white chocolate.
Or substitute the regular Oreos for one of the flavored Oreos like mint Oreo or peanut butter Oreos or perhaps birthday cake flavored Oreos for a special treat.
You could use homemade marshmallows, but I have not tested this recipe with homemade.

Make sure you pat the Rice Krispie mixture firmly into the pan and let cool before slicing. But don't apply too much pressure to the krispie treat mixture or you'll end up with hard Rice Krispies treats. Make sure you've melted the marshmallows so that they've lost their shape. It's a delicate balance. Melt them too much and you'll end up with crunchy treats.
It's definitely cheaper to make them yourself. This parent broke down the cost of making homemade and is better at math than I am.
No, stale marshmallows don't melt as well as fresh ones. You can use stale marshmallows for s'mores however.

Instructions
You want everything ready before you melt the marshmallows because once those have melted, you’ll have to work quickly before the marshmallows begin to cool and get difficult to work with.
Measure cereal and pour into a large bowl.
Prepare your pan by spraying it with non-stick spray and lining it with parchment paper.
Measure cereal, pour into a bowl.
Crush the cookies and add to the cereal.
To crush the cookies, put them in a large resealable bag and smash them with a rolling pin or a meat mallet. You want the cookies pretty well crushed but you do want some chunks of Oreo.
Add the cup of mini marshmallows and ¼ teaspoon sea salt to the bowl full of cereal and crushed cookies. Toss with your hands to get everything combined. Or, use a spatula but your hands will be easier.
Melt butter in your microwave safe bowl.
Cook in 10 second increments so you don’t burn the butter.
Once melted, add the 12-ounce bag of marshmallows.
Stir until the marshmallows are coated with the melted butter.
Heat in the microwave for 45 seconds. Remove and stir with a spatula.
Heat for another 45 seconds or until marshmallows have softened and have begun to lose their shape.
Stir.
If you’re confident the marshmallows are soft enough, pour the cereal/cookie/mini marshmallow mixture into the bowl of melted marshmallows and stir immediately working quickly until well combined.
This will take at least a minute. Make sure there aren’t any dry patches of cereal.
Pour into the prepared pan and smooth out into each corner of the pan using the spatula or your hands if you’re not going to burn yourself. Butter your hands first to keep the mixture from sticking.
Let rest until cool, about 30 to 45 minutes.
Slice and enjoy.
Store for up to one week in an airtight container or wrap with plastic wrap.
