Mini Egg Cookies, chewy with a bit of crunch thanks to the mini egg candy shell, are kind of like Santa Claus. They only come around once a year, in the early spring when Easter candy, specifically Cadbury Mini Eggs, hit the store shelves.

Are you a Cadbury fan?
I must confess, those Cadbury Creme Eggs that are fashioned to resemble a raw egg gross me out. I am definitely team #antiCadburyCremeEgg.
But, these mini eggs are not those eggs.
Cadbury Mini Eggs are a crunch shell, similar to an M&M shell, and filled with a delicious solid chocolate, also similar to an M&M but better tasting chocolate and shaped like a mini egg!
Incidentally, Mini Eggs are older than I am!
This was inspired by my Easy, Chewy M&M Cookie Bars + What to Make with M&M's on this site, and these cookies pair well with a glass of milk or a cup of tea or a shot of espresso.
Or a chocolate easter bunny.

Ingredients
- All purpose flour
- Baking soda
- Kosher salt
- Butter
- Granulated sugar
- Brown sugar
- Vanilla extract
- Chocolate chips
- Cadbury Mini Eggs

Instructions
Whisk together dry ingredients-flour, salt, baking powder-in a medium bowl. Set aside.
Beat butter and sugars with an electric mixer until light and fluffy. This will take a few minutes if using a stand mixer or as long as five to six minutes with a hand mixer.
Add eggs and vanilla. Beat for another minute.
Add dry ingredients and mix until just combined or until you donβt see any more streaks of flour.
Pour in the chocolate chips and stir by hand to combine.
Add the bag of mini eggs and stir until completely incorporated.
Chill dough for an hour then bake.
If you can't find Cadbury Mini Eggs, you could substitute M&M candies in Easter colors but the effect won't be the same.
Hint: I like to crush a handful of mini eggs with a rolling pin or a meat mallet in a resealable bag so you get bits of crunch throughout your cookies. This is optional.
Substitutions/Variations
- Butter - substitute margarine or shortening if you must
- Brown Sugar- you can use all granulated sugar if you like but the cookies may be a little crunchier.
- Granulated Sugar- use all brown sugar just know your cookies may turn out slightly darker than the ones pictured here.
- Vanilla extract - if you don't have any, you can leave this out. The cookies may not be as delish but they'll still turn out the same.
- Chocolate Chips-use what you have or what you prefer, whether milk, semi-sweet, dark or white.

Storage
Store cookies, wrapped in a tin or airtight container at room temperature for up to a week.
Freeze this cookie dough in a freezer safe container for up to three months.

Top tip
Make sure you measure all of your ingredients correctly, including the flour.
Too much flour or not enough can ruin your batch of cookie dough. Weighing flour is best using a kitchen scale but failing that, use the dip and sweep method to measure your flour. Pour flour into a bowl and fluff it up with a spoon. Now spoon flour into your measuring cup until slightly heaped. Then slide a butter knife or a bench scraper across the top of the measuring cup to remove the excess.

Mini Egg Cookies
Mini Egg Cookies are just like chocolate chip cookies only they're packed with Cadbury Mini Eggs as well. This is a great way to use up leftover Easter candy.
Ingredients
- 2 Β½ cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup butter
- ΒΎ cup sugar
- ΒΎ cup brown sugar
- 2 teaspoons vanilla
- 2 eggs
- 1 cup milk chocolate chips
- 9-ounce or 10-ounces bag Cadbury Mini Eggs

Bake at 350 for 12 minutes or until cookies are lightly golden.
Pay attention to how the cookies smell. Once you smell freshly baked cookies, they're done baking or nearly so.
Notes
Optional--you can crush a handful of the mini eggs in a resealable bag with a meat mallet or rolling pin so you get more candy dispersement through the cookie dough.
