You're in the middle of baking a cookie recipe when you realize you're out of baking powder OR your baking powder expired last year.
Don't run to the store. Make your own.
Combine cream of tartar, baking soda and cornstarch in a 2-1-1 ratio.
Homemade Baking Powder Recipe
Mix the following to get one teaspoon of baking powder:
- Β½ teaspoon cream of tartar
- ΒΌ teaspoon baking soda
- ΒΌ teaspoon cornstarch or arrow root
Note: there are two types of baking powders, single-acting and double-acting.
This recipe makes single-acting baking powder but you should know that baking powder can be single-acting or double-acting.
Double-acting reacts to both moisture and heat. Single acting reacts immediately to moisture.
If youβve got a container in your pantry thatβs been exposed to moisture, you may have lost the activating power of the powder.

Cream of Tartar Substitute
So, no baking shame if you don't keep cream of tartar on hand.
It's not a common ingredient, in fact cream of tartar is a powdery residue left over from wine production.
It's basically a powdery acid.
You can use 1.5 teaspoons of lemon juice or a neutral vinegar as a cream of tartar substitute.

Is Your Baking Powder Still Fresh?
Here's a test: Drop a bit of baking powder, a half teaspoon or so, into a small bowl of hot water. If the powder bubbles vigorously, it is still fresh.

Homemade Baking Powder Recipe
Easy homemade baking powder recipe.
Ingredients
- 2 Tablespoons cream of tartar
- 1-Β½ tablespoons cornstarch (or arrowroot)
- 1 tablespoon baking soda
Instructions
- Measure cream of tartar, cornstarch and baking soda in a small bowl.
- Sitr to combine.
- Put in a jar with a tight-fitting lid.
- Store in a dry place for up to a month.
Notes
You can substittute arrowroot for the cornstarch.
This recipe make a quarter cup.
