Today is a sunny Saturday so I’m working in the garden and husband is busy finishing our chicken coop. I know, I know, we are way late to the raise your chicken craze but we thought we’d give it a try this summer. We have the land, it will be fun for our son (and our cats and dog) and I really love the idea of having fresh eggs at my fingertips for baking.
How to Make Southwestern Veggie Bagel Sandwiches:
When I have a busy day, assembling sandwiches is easier than cooking. So I slathered jalapeno cream cheese on lightly toasted everything bagels and topped them with slices of red onion, lettuce and avocado. They were so good and so quick. I would have liked slices of tomato also but I didn’t have any and wasn’t ready to make a trip to the grocery store. I need other things but I don’t have a list ready.
