    Your New Potato Salad Recipe

Jalapeno Dill Potato Salad from The Homesick Texan is the best thing I made in May.

I'm not a fan of potato salad--too many ingredients squished together--plus eggs! Ick! I have egg fear. But this recipe doesn't use eggs.

The husband and the teenage son are big potato salad fans so I made this dish for them for the Memorial Day weekend but I could not stop eating it.

A note of caution: I made the recipe as written and found it uncomfortably spicy. It calls for two tablespoons of pickled jalapeno juice and a cup of chopped pickled jalapenos. When I make it again, and I will for sure, I'll reduce the jalapeno to a half cup. If you're cooking for people who really can't tolerate much spice, I would cut it down to a quarter cup of jalapeno.

    Watching

I had a three-week chest cold in May so I spent more time than I would have liked watching television. I became hooked on Bates Motel on Netflix. It is so scary and creepy, just the kind of show I love. I'm just starting Season 4 and there's another season to go after this so please, no spoilers.

However, don't watch it with littles awake.

    Reading

I'm currently reading a blogging book, written by the blogger behind Chelsea's Messy Apron. I'm just half way through but my initial thoughts are that this is geared much more toward someone who is just getting started.

Also, and this is a minor thing but something that's really irritating me.  The title of the book is How I made $40,000 My First Year of Blogging.  However, she says in the beginning of the book that she'd had another blog before starting the one, which has been a big success. So, that's not really making $40,000 your first year of blogging. She obviously learned some things with that first blog, that led to the success she had with the second blog.

So, every time I read, a reference to making such and such amount in month x of "my first year of blogging" I want to throw a fork at her. I think she's setting her readers up for unrealistic expectations.

Am I being too much of a fussbudget?

    Doing

    I've started so many seeds:

    Here's a short list:

    • Queen Lime Zinnias
    • Oklahama Salmon Zinnias
    • Globe Amaranth-Sunset Mix

    Practicing

I love stopping for ten minutes of yoga during a long workday. Or any workday for that matter. I've been doing this one a bunch lately. Just ten minutes. No mat needed.

What have you been up to?

The potato salad sounds pretty tasty, but I think I would have to cut the pickled jalapeno down to a 1/4 cup, the full cup would probably be too much for me. I hope you are over your cold.

Yeah, I really like spice but it was a bit much. I am over my cold, just have a bit of a lingering cough. Thanks for asking. Do you have any good potato salad recipes? Thanks for stopping by!
