First, if the temperature is really soaring, I like to avoid cooking in general.
Order takeout or go to the nicely air-conditioned grocery store and grab a rotisserie chicken.
But, if it's been a steamy season and you're tired of doing just that. Here are some ideas.
In general, if I must cook I avoid turning on the oven at all costs so the recipes I'm going to share with you can be made on a stove top, in a slow cooker or in a toaster oven or microwave or outside on a grill.
Note: one of the recipes I listed, Make Ahead Salmon, is started in the oven.
However, it cooks for no more than five to seven minutes, you could in a pinch, put it in a toaster oven for maybe three to four minutes or in a microwave for two minutes.
Fresh shrimp on a bed of crispy, warm tortilla chips, oozing with melted cheese and a spicy Habanero-Key Lime vinaigrette. A batch of slow cooker barbecue ribs that you finish on the grill is perfect for hot weather. Keep in mind this option takes a bit of planning.
