Thin Mints Brownie Mix are the best way to get your Girl Scout Thin Mints cookie fix until your cookie order arrives! (This is not a sponsored post, I have no relationship with Pillsbury or J.M. Smucker Company, I saw the mix and had to try it.)
The Cookie Order
I ordered a gross of Girl Scout cookies a few weeks ago. Okay, maybe not a gross. But, a gross amount considering I will eat most of the cookies myself. Oh sure, 13 and 49 will eat some but only if they’re able to wrestle boxes out of my chocolate crumb covered fists.
Anyhoo, I ordered said cookies from the daughter of the accounting manager at work, K. It was my civic duty to order several boxes because she bought two calendars from
my son me for my son’s 8th grade class trip fundraiser. You know how it goes, once a coworker supports your child’s fundraiser for whatever, you’re indebted to the coworker and her offspring for at least two generations.
I began harassing K about when the cookie order would arrive the day after I placed my order. She was vague, offering a possible date of late February or March.
Just a week later, I was wandering aimlessly through the baking aisle at a local grocery store and spied several Girl Scout themed baking mixes, including a green box reminiscent of the Girl Scout cookie boxes of my youth, which contained Thin Mints Brownie Mix.
These brownies do not disappoint. They are thick, chewy, chocolaty and minty. In fact, Pillsbury has nailed the Thin Mints flavor perfectly. I felt like I was sinking my teeth into a thin mint only in brownie form. What really made the brownie stand out was the spot-on flavor and the generous serving of chocolate chunks in the mix.
