Good morning and happy Saturday.
If you ask me, Saturdays should be about lazing around, reading the paper, making a third pot of coffee, having a good lunch then taking a long nap. Bagels are my perfect Saturday lunch. They’re quick and easily customized to fit your mood.
I find recipe ideas everywhere, including magazine advertisements, which is where I got the idea for this week’s Saturday Sandwiches segment: Sushi Bagels. I think it was an Einstein Bros. ad that had layered all of the typical sushi ingredients on a bagel. My husband and I love sushi and we love bagels so I figured it would be a win-win and it was. This kind of food is the very best, packed with flavor yet taking seconds to put together.
Of course, I’m not entirely sure now that it was an Einstein Bros. Bagel ad, I’ve googled it and can’t find it so if you are a Mr. Einstein Bros. Bagel man, my apologies.
This is too simple for a recipe so I’m just going to tell you what to do.
Toast a bagel or three. Mix a teaspoon or a tablespoon of wasabi paste into a couple ounces of cream cheese. Start by adding a teaspoon and taste after blending. Wasabi is spicy so start slowly if you aren’t used to it.
Add slices of peeled cucumber and top with smoked salmon or crab or shrimp. Top with slices of avocado. I would have but we were out and I’m trying not to run to the store for just one ingredient. Serve.
