I planned to make jambalaya for dinner tonight.
I also planned to spend all afternoon at the beach with my family.
One of these things does not easily match the other.
When I get home from an afternoon of sun and water, I’m drained and in no mood to cook, never mind cooking a dish that involves a good amount of chopping.
So, I packed up my cutting board and knife, garlic, onion, celery and pepper and took everything to the beach with me. I chopped all the veggies up on the deck when I needed a swim break. This worked out really well and I’ll do it again. It was great to just toss everything in a pot when we got home and start cooking.
I won’t, however, repeat this particular recipe for jambalaya, which I found in one of my favorite cookbooks. I had a feeling that the dish was going to taste too bland and I was right. Do you have a good jambalaya recipe to share?
