Hello friend, how are you this Saturday? I’m heading to the farmer’s market to hopefully find a couple of tomatoes for a sandwich I love to hate: BLT’s.
See, I love the components: bacon, lettuce and tomato–especially during the summer when I can get fresh lettuce and tomatoes. But I don’t like how thick slices of ripe tomato make the toasted bread soggy.
I hate soggy, that’s why I eat my cereal dry.
But I’ve discovered the perfect solution, layer the bacon, lettuce and tomato on a toasted English muffin. The English muffin doesn’t get limp no matter how juicy the tomato. It’s so good, you must try it.
I thought of doing English Muffin BLT’s a few months ago after deciding to serve grilled hamburgers on English muffins instead of hamburger buns. This was borne out of my loathing for hamburger buns, which aren’t strong enough to stand up to burger, cheese, avocado slices, lettuce, onion and tomato and salsa et al. without falling apart.
I guess you might find a good bakery hamburger bun to stand up to all those ingredients but we don’t have many bakeries in my rural area of Maine. And none that sell hamburger buns. I know, I know, woe is me. As my cheeky son would say “first world problems.”
To make BLT’s on English muffins really sing, use garlic mayonnaise instead of regular. Or use pesto mayo. I put a dash of garlic scape pesto in mayo for these sandwiches and it was sooo very delicious.
What kind of bread do you use for BLT’s? Does soggy bread bother you? What are you doing today?
