Welcome to Day 21 Eat Your Vegetables
I’ll never forget a recent trip to the grocery store to get ingredients for two vegetable dishes. The recipes called for several vegetables, which filled two grocery bags, and my total bill was so cheap. Maybe $11 or $12? I couldn’t believe how cheap it was to stock up on nothing but vegetables.
It was a good reminder of what I know intellectually–save money by eating less meat and more vegetables.
One of my favorite ways to eat vegetables–other than this recipe, is in a sandwich. You know what’s really, really good and cheap? A grilled portabello mushroom sandwich, like this one. What I love about portabello mushrooms is you get a steak-like flavor, which makes you forget you’re eating a vegetable at a fraction of a steak’s price.
Another vegetable dish in my occasional repertoire is this one, which is also one of the most popular recipes on Kitchen Serf. The misters don’t care for it because they believe it must have meat to be a meal.
