Put down that box of spaghetti. Pesto is not just for pasta. I’ll admit it was a staple that got me through lean college years but there are many equally good ways to use pesto.
Here are my 5 favorite ways to add flavor to food with pesto.
1.Top a piece of fish, a firm, white fish like cod or haddock with a thin layer of pesto and bake
2. Spread pesto on a pizza crust instead of using a tomato sauce (cilantro pesto on a southwestern chicken pizza)
3. Combine pesto and mayonnaise to spread on bread for bacon, lettuce and tomato sandwiches
4. Mix pesto into melted butter to top green beans, potatoes or corn on the cob
5. Whisk pesto and olive or canola oil together for a quick salad dressing
Note: these suggestions will work with any type of pesto, including basil, spinach, cilantro or my favorite, garlic scape.
